Grilled Halibut with Avocado Salsa

  • 1 avocado, cubed
  • 2 chopped plum tomatoes
  • 1 sliced red onion
  • 3 tbsp olive oil
  • 1 lime, juice only
  • Small bunch of chopped coriander
  • 2 x 150g skin-on halibut fillets
  • Mix the avocado, chopped tomatoes, red onion, olive oil, lime juice and chopped coriander in a bowl and season with salt and pepper. Set aside.
  • Heat a griddle pan until very hot. Season the fish with pepper and a small pinch of salt flakes, then drizzle with olive oil. Griddle the halibut for 3 mins on each side, or until char-lined and cooked through. Leave to rest for 4 mins, then serve with a dollop of the avocado salsa - perfect!
