Grilled Halibut with Avocado Salsa
- 1 avocado, cubed
- 2 chopped plum tomatoes
- 1 sliced red onion
- 3 tbsp olive oil
- 1 lime, juice only
- Small bunch of chopped coriander
- 2 x 150g skin-on halibut fillets
- Mix the avocado, chopped tomatoes, red onion, olive oil, lime juice and chopped coriander in a bowl and season with salt and pepper. Set aside.
- Heat a griddle pan until very hot. Season the fish with pepper and a small pinch of salt flakes, then drizzle with olive oil. Griddle the halibut for 3 mins on each side, or until char-lined and cooked through. Leave to rest for 4 mins, then serve with a dollop of the avocado salsa - perfect!
