Grilled Oysters with Fennel

  • 12 freshly shucked oysters
  • 4 tbsp softened butter
  • 1 tbsp fennel fronds, finely chopped
  • 1 tbsp fennel seeds, ground in a pestle and mortar
  • 1 tbsp finely chopped spring onions
  • Salt and pepper
  • Mix the butter, fennel fronds, fennel seeds, spring onion and a pinch of salt and pepper in a small bowl, then place in the fridge to firm up.
  • When ready to cook, heat the grill to medium-high. Place a spoonful of the fennel butter onto each oyster in the half-shell, then grill for 2-3 mins or until the edges of the meat begin to curl and the butter is bubbling. Serve immediately.
