- 300g pork loin steaks
- 2 tbsp gochujang
- 2 tsp sugar
- 2 tbsp Thai fish sauce
- 1 lime, juice only
- 1 red chilli, thinly sliced
- 275g rice noodles
- 1 shredded little gem lettuce
- 2 thinly sliced baby cucumbers
- 1 grated carrot
- 12g chopped mint leaves
- Preheat the grill to medium. Brush the pork steaks all over with gochujang and grill for 5-6 mins on each side, or until browned and cooked through. Meanwhile, mix the sugar, fish sauce, chilli and lime juice with 4 tbsp of water to make the dressing.
- Cook the noodles according to packet instructions and divide between 2 bowls. Top with cucumbers, carrot, lettuce and mint leaves, then thinly slice the pork and add to the bowls. Drizzle with the dressing and pork juices, maybe adding a squirt of sriracha if you fancy it, too.
