- 1kg large raw prawns, peeled and deveined, tails on
- 4 garlic cloves, finely minced
- 60ml extra virgin olive oil
- Juice and zest of 1 lemon
- 1 tsp chilli flakes
- Large handful of flat-leaf parsley, roughly chopped
- Salt and black pepper
- Crusty bread to serve
- Toss prawns with garlic, olive oil, lemon zest, chilli flakes, salt and pepper. Leave 15 minutes to marinate.
- Heat a griddle pan or barbecue grill to very high heat. Cook prawns in a single layer for 1.5-2 minutes per side until pink and just cooked through. Work in batches if needed.
- Transfer to a serving plate, squeeze over lemon juice and scatter with fresh parsley. Serve immediately with plenty of crusty bread.
