Halloumi and Spicy Cauliflower Rice
- 500g cauliflower florets
- 150g baby spinach
- 1 tbsp olive oil
- 1 red onion, sliced
- 120g halloumi cubes
- 1 crushed garlic clove
- 1 thumb-sized piece of ginger, grated
- 1 tsp ground turmeric
- 1 tbsp curry powder
- 500g cooked brown basmati rice
- 1 red chilli, sliced
- Boil the cauliflower for 5 mins in salted water, and add the spinach for the final 2 mins. Drain, and set aside. Heat up the oil in a large frying pan, and fry the onion for 5 mins. Add the halloumi, cook for 5 mins more, then tip in the garlic, ginger, curry powder, and turmeric. Stir through the rice, cauliflower and spinach, heat everything through, then serve with a sprinkle of salt and the chopped chilli on top.
