Ingredients

Method

  • 3 tbsp olive oil
  • 1 sliced onion
  • 1 red capsicum/pepper, sliced
  • 2 crushed garlic cloves
  • 3 tbsp sundried tomato pesto
  • 1 tsp ground coriander
  • 400g tin of mixed beans, drained
  • 400g tin of chopped tomatoes
  • 125g sliced halloumi
  • Small bunch of coriander, chopped
  • Garlic bread, to serve
  • Heat the oil in a frying pan, and cook the onion and capsicum/pepper for 10 mins with a pinch of salt to soften. Add the pesto, ground coriander, and garlic, and cook for another minute or so, before tipping in the tomatoes and beans with ½ a tin of water, and simmering for 10 mins.
  • Fry the halloumi in a frying pan with a little oil for 2 mins on each side, or until nicely golden. Spoon the bean mixture into serving bowls, top with the halloumi, and scatter with the coriander. Serve with garlic bread, if you fancy it. Nice!
