Ingredients
Method
- 900g mix of cauliflower and broccoli florets
- 1 tbsp butter
- 1 sliced onion
- 2 tbsp flour
- 400ml whole milk
- 200g grated cheddar
- 1 tsp mustard
- 300g shredded ham
- Preheat the oven to 200C. Boil the cauliflower and broccoli for 3 mins, then drain. Melt the butter in a saucepan, gently fry the onion for 4 mins, then stir in the flour and cook for 30 seconds before gradually adding the milk a little at a time, stirring constantly until you get a thick white sauce. Stir in ⅔ of the cheese and all of the ham and mustard, and cook until the cheese is melted. Season well.
- Scatter the veggies over the base of a shallow oven dish, then pour the sauce all over the top. Sprinkle with the remaining cheese and bake for 20 mins, or until golden and bubbling. Serve immediately with crusty bread.
