Ingredients
Method
- 900g mix of cauliflower and broccoli florets
- 1 tbsp butter
- 1 sliced onion
- 2 tbsp flour
- 400ml milk
- 200g mature cheddar, grated
- 1 tsp English mustard
- 300g shredded roast ham
- Salt and pepper
- Preheat your oven to 200C. Boil the cauliflower and broccoli for 3 mins, then remove from the heat and drain well. Melt the butter in a saucepan and gently fry the onion until softened, then stir in the flour and cook for 1 minute before slowly adding the milk, whisking as you go to make a thick white sauce.
- Add two-thirds of the cheese, all the ham and the mustard to the white sauce, and cook for 3 mins to melt the cheese. Season well. Scatter the vegetables in an oven dish and pour over the sauce, then sprinkle with the remaining cheese and plenty of black pepper. Bake for 20 mins, then serve with green leafy salad.
