Ham, Cheese and Broccoli Conchiglie

  • 300g conchiglie pasta
  • 1 broccoli head, cut into small florets
  • 1 tbsp olive oil
  • 1 chopped onion
  • 2 crushed garlic cloves
  • 250g ham, cut into chunks
  • 300ml double cream
  • 1 tbsp mustard
  • 150g grated mature cheddar cheese
  • Cook the pasta in a large pan of boiling salted water until al dente, adding the broccoli pieces to the pan for the last 4 mins or so. Drain and set aside.
  • Heat the oil in a frying pan and cook the onion for 5 mins to soften. Stir in the garlic and cook for a minute more, then stir in the cream, mustard and ham, and bring to a simmer. Stir in the pasta and the broccoli, followed by the grated cheese, mixing well to coat the pasta in the sauce. Season and serve immediately.
