  • 75g butter
  • 200g flour
  • 500ml milk
  • Salt and pepper
  • 75g fresh breadcrumbs
  • 100g ham, chopped
  • 50g serrano ham or similar, chopped
  • 1 bunch of parsley, chopped
  • 75g flour
  • 2 eggs, beaten
  • 100g panko breadcrumbs
  • Oil for frying
  • Garlic mayo, to serve
  • Melt the butter in a saucepan and whisk in the flour. Cook for 2 mins, then whisk in the milk slowly to make a very thick white sauce. Season well, stir in the breadcrumbs, meat, and parsley, then place in the fridge to chill for 3 hours.
  • Shape the chilled and firm mixture into 7cm cylinders. Roll in the flour, dip in the beaten egg, and coat in panko breadcrumbs, then deep fry in batches until golden and crisp. Drain on kitchen paper and serve with garlic mayo.
