What you'll need:

  • 6 medium white potatoes
  • 4 slices of Serrano / Parma ham (or just really good quality, cured ham of any kind)
  • A good splash of olive oil
  • 1 chopped garlic cloves
  • 3 torn basil leaves
  • 1 tsp chopped parsley
  • 2 eggs
  • A knob of butter
  • 200g breadcrumbs
  • A dash of milk
Time: 30 minutes
Serves: 6

Method

First

Peel, chop and boil your potatoes for about 15 minutes or until very tender. Mash well with the butter and milk, add some seasoning, and continue mashing until nice and smooth. Leave to cool for 30 minutes.

Second

Chop your ham, and lightly fry for 5 minutes with some garlic in a pan, along with a splash of olive oil. Add to the mashed potato, along with the herbs, and some more salt and pepper.

Third

Set out two dessert bowls. In one, beat two eggs. In the other, spread plenty of breadcrumbs. Take a good spoonful of your cooled mash and ham mixture, and form it with your hands into a croquette shape. This should be roughly the length of your little finger, and around an inch in diameter. Once you’ve made all of your croquettes, place them on a greased tray, and cool in the fridge for at least 30 minutes.

Fifth

To cook, deep fry your croquettes in olive oil for about 3-4 minutes, or until golden and crispy all over. Do this in batches in either a wok, a deep pan, or a fryer, and then leave to dry on some kitchen paper. Serve with a fresh green salad, olives and other tapas favourites. Delicious!
