Healthier Buttermilk Fried Chicken

  • 600g chicken thigh fillets, skin and bone removed
  • 750g chicken drumsticks, skin removed
  • 200ml buttermilk
  • 1 tsp each turmeric, garlic powder, onion salt and smoked paprika
  • 1 tbsp sriracha
  • 80g flour
  • 30g panko breadcrumbs
  • Oil spray
  • Mix together the buttermilk, sriracha and ½ tsp of each of the spices with some seasoning in a bowl. Toss in the chicken and mix to coat, then leave overnight in the fridge. When ready to cook, preheat the oven to 240C and mix the rest of the spices with the flour and breadcrumbs. Tip half onto a plate, and dip the chicken into the mixture to coat all over.
  • Discard any leftover marinade, then spray the breaded chicken with some oil and cook for 35 mins or until the juices run clear. Serve with lime wedges, chips and coleslaw, and enjoy!
