Healthier Chicken Waldorf
- 2 chopped little gem lettuces
- 150g green grapes, sliced
- ½ green apple, cut into matchsticks
- 2 sliced celery stalks
- 200g cooked chicken breast, shredded
- For the Dressing
- 3 tbsp low fat yoghurt
- 3 tbsp low fat mayo
- 3 tbsp chopped dill
- 1.5 tsp mustard
- ½ lemon, juice only
- 1.5 tsp runny honey
- Heat a dry frying pan and toss in the walnuts to toast for 4 mins. Set aside to cool completely, and meanwhile, mix the ingredients for the dressing in a small bowl and season well.
- Divide the leaves between 2 serving plates and top with the celery, apple matchsticks and grapes. Roughly chop the walnuts and scatter all over the top, then spoon on the shredded chicken and drizzle with the dressing. Serve immediately.
