Ingredients
Method
- 4 lamb cutlets
- Olive oil
- 1 slice of toasted bread
- Handful each of parsley, mint, and basil, chopped
- 30g grated parmesan
- Salt and pepper
- Preheat the grill to high. Tip all of the ingredients, minus the lamb, into a food processor and blitz to make a crust.
- Lightly drizzle the lamb with olive oil, and season well with salt and pepper. Stick under the grill for 4-5 minutes, turning once, or until cooked to your liking. Serve scattered with the fresh herb crust and some quality bread.
