Herby Beef with Bean Salad

  • 100g beef fillet
  • 1 tbsp olive oil
  • Salt and pepper
  • 1 tbsp chopped chervil
  • 1 tbsp chopped parsley
  • 50g fresh breadcrumbs
  • 1 tbsp olive oil
  • 1⁄2 lemon, zest and juice
  • 75g tin of borlotti beans, drained
  • Handful of fresh parsley
  • Salt and pepper
  • Preheat the oven to 200C. Rub the beef well with olive oil and plenty of salt and pepper, and place the herbs and breadcrumbs together in a bowl, and combine. Coat the beef fillet in the herbed breadcrumbs, then fry the beef in a little more olive oil for a few minutes on each side.
  • Transfer the beef to the oven, and cook for 4-5 minutes, or until done to your liking. Meanwhile, make the salad by mixing together all of the ingredients in a bowl, and seasoning to taste. Serve the beef on a bed of salad, and enjoy.
