Ingredients
Method
- 1 small onion, chopped
- 3 cloves of garlic, crushed
- 1 red chilli, finely chopped
- 1 tsp fennel seeds, crushed
- 55g dark brown sugar
- 50ml dark soy sauce
- 300ml tomato ketchup
- Salt and pepper
- Fry the garlic and onion in the olive oil, and stir through the chilli and fennel seeds until all is well incorporated. Add the soy sauce and ketchup to the pan, and season liberally with salt and pepper.
- Bring up the boil, and simmer until slightly reduced and sticky. You can then use this sauce as a glaze for ribs, or to serve with all your favourite barbecued meat and veggies.
