Homemade Cinder Toffee
- Splash of sunflower oil
- 200g golden caster sugar
- 1 tbsp bicarbonate of soda
- 100g runny honey
- Line a baking tray with parchment and grease with the oil. Place the honey and sugar in a large saucepan with 4 tbsp of cold water, then gently heat to dissolve the sugar. Once melted, bring to the boil and rapidly heat to 149C. Quickly remove from the heat and whisk in the bicarbonate of soda - it will froth a lot, but don’t panic!
- Pour the mixture into the tray and leave to cool completely. When set hard, break into shards and serve with ice cream… or just nibble at it on its own.
