  • 1 tbsp oil
  • 500g 20% fat steak mince
  • 4 slices of cheese
  • 1 sliced red onion
  • Shredded lettuce
  • 2 sliced tomatoes
  • 1 large gherkin, sliced
  • Sauces, your choice
  • 4 burger buns
  • Preheat the oven to 100C. Divide the steak mince into 4 loose piles and season with salt and pepper. Heat about ¼ tbsp of oil in a frying pan over a high heat, and place one of the mince piles into the pan. Quickly cover the mince with a square of baking parchment and press down with a small pan to ‘smash’ the meat. Cook for 2 mins.
  • Remove the paper and turn the burger over. Press down with a wooden spoon or spatula, top with a slice of cheese and cook for 1 minute, then transfer to a baking tray and place in the oven to stay warm while you repeat the process for the other 3 burgers. When ready, stuff the smash burgers into buns with all the other ingredients and serve immediately.
