  • Veg oil, for frying
  • 2 sliced red onions
  • 1 crushed garlic clove
  • 1.5 tbsp curry powder
  • 2 tbsp mango chutney
  • 150g shredded cabbage
  • 8 eggs
  • 100ml milk
  • 1 lime, juice only
  • Bunch of chopped coriander
  • Fry the onions for 5 mins in a glug of oil. Add the garlic and curry powder, fry for 3 mins more, then stir in the chutney. Once jammy, add the cabbage and a splash of water. Stir fry until the cabbage is wilted.
  • Beat the eggs and milk together in a jug, and stir in the lime juice and coriander. Season well, then pour over the cabbage mixture and simmer gently for 10 mins. When set on the bottom but still quite runny on the top, place the pan under a hot grill for 4 mins, or until golden and a little puffy. Serve with coriander scattered over the top - perfect!
