Italian White Bean Salad
- 1 bunch of spring onions
- 2 crushed garlic cloves
- 1 red chilli, deseeded and finely chopped
- 2 x 400g tins of cannellini beans, drained
- 400g tin of butter beans, drained
- 6 tbsp olive oil
- 2 tbsp white wine vinegar
- Handful of chopped parsley
- Finely chop both the white and green parts of the spring onions, then add to a salad bowl with the garlic and chopped chilli.
- Mix the butter beans and cannellini beans into the spring onion mixture. In a separate jug, whisk together the olive oil, white wine vinegar and plenty of salt and pepper. Stir through the salad with lots of chopped parsley, then serve as a side to other Italian salads or grilled chicken and fish.
