Italian White Bean Salad

  • 1 bunch of spring onions
  • 2 crushed garlic cloves
  • 1 red chilli, deseeded and finely chopped
  • 2 x 400g tins of cannellini beans, drained
  • 400g tin of butter beans, drained
  • 6 tbsp olive oil
  • 2 tbsp white wine vinegar
  • Handful of chopped parsley
  • Finely chop both the white and green parts of the spring onions, then add to a salad bowl with the garlic and chopped chilli.
  • Mix the butter beans and cannellini beans into the spring onion mixture. In a separate jug, whisk together the olive oil, white wine vinegar and plenty of salt and pepper. Stir through the salad with lots of chopped parsley, then serve as a side to other Italian salads or grilled chicken and fish.
