Kale, Rosemary, and Chilli Side
- 3 tbsp olive oil
- 1 onion, sliced
- 2 sprigs of rosemary
- 1 hot red chilli, thinly sliced
- 4 sliced garlic cloves
- 250g kale or cavolo nero, stems trimmed, and cut into thick slices
- Salt and pepper
- Heat the oil in a deep lidded pan over a medium heat, then chuck in the onion and fry gently until softened. Add the rosemary stalks, chilli, and garlic, and then fry for a further minute.
- Add the kale to the mix, and season well with salt. Cover with the lid, reduce the heat to its lowest setting, and gently cook for 20 minutes. Stir every five minutes, then remove the rosemary stalks, and serve alongside either a lamb, beef, or duck dish.
