Kimchi and Prawn Cocktail Boats
- 1 Baby Gem lettuce, leaves separated
- 2 tbsp mayo
- 1.5 tbsp ketchup
- ½ tsp sriracha
- ½ tsp soy sauce
- ½ tsp fresh lemon juice
- 30g drained kimchi
- 150g shelled and cooked prawns
- 1 sliced spring onion
- 1 avocado, chopped into cubes
- Black sesame seeds
- Submerge the 10 largest and most cup-shaped lettuce leaves in iced water. Meanwhile, mix the mayo, ketchup, sriracha, lemon juice and soy sauce in a bowl and mix well. Finely chop the kimchi and stir into the sauce with the spring onion and prawns. Season to taste.
- Drain the lettuce leaves and pat dry, then spoon the prawn mixture into each leaf. Top with black sesame seeds and diced avocado, and serve.
