Korean Beef Tartare Recipe

What you'll need:

  • 500g beef fillet (the best you can afford)
  • 15g fresh root ginger
  • 4 cloves of garlic
  • 4 slices of onion
  • 4 spring onions
  • 4 tbsp soy sauce
  • 2 tsp hot red chilli powder
  • 1.5 tsp sesame oil
  • 2 tsp sugar
  • 2 little gem lettuce
  • 1 Asian pear
  • 4 quails eggs (optional)
Time: 30 minutes
Serves: 4

Method

First

First, prepare your beef by trimming away any sinew, and finely slicing. Take a few slices together, and cut into very thin strips, then place the meat into a large mixing bowl.

Second

Crush the garlic, finely chop the ginger, and crush the onion (you can use a garlic press), and place in a small bowl. Add to this the finely chopped spring onions, the sesame oil, sugar, chilli powder and soy sauce, and mix together before tipping the whole lot over the beef.

Third

Core and slice the pear into strips, and remove the leaves from the lettuce. Dry with a little kitchen paper. Divide the lettuce and pear between four plates, then spoon the beef and sauce over the top. Sprinkle with sesame seeds, and serve with half a quail’s egg if you’re feeling fancy.
