What you'll need:

  • 2 tsp vegetable oil
  • 2 mackerel fillets
  • 1 tsp sesame seed oil
  • 2 spring onions, thinly sliced
  • 1 red chilli, finely chopped
  • Cooked rice to serve
  • Kimchi to serve
Serves: 2
Time: 10 minutes

Method

First

Kick things off by heating a pan with the vegetable oil. While this is hotting up, season the fish fillets well with plenty of salt and black pepper.

Second

Fry the fish fillets - skin side down - for two to three minutes, pressing down with a wooden spoon to stop them curling up. Flip them over and fry for a further couple of minutes, before removing from the heat and dressing in the sesame oil.

Third

Serve on a plate with the chilli and spring onions tangled over the top, alongside a big spoonful of cooked rice and a hearty dollop of spicy kimchi. Simple perfection!
