Korean Pork and Kimchi Stew

  • 2 tbsp oil
  • 700g kimchi
  • 1 tbsp sugar
  • 600g skinless pork belly, cut into 3cm pieces
  • 5 crushed garlic cloves
  • 2 tbsp fish sauce
  • 1 tbsp soy sauce
  • 1 tbsp chilli powder
  • 2 tsp rice wine vinegar
  • Steamed white rice, to serve
  • Heat the oil in a large saucepan, add the kimchi and sugar and cook for 5 mins. Add 1.25 litres of water, bring to a simmer and add the pork. Reduce the wheat to medium, cover the pan and cook, stirring regularly for 20 mins or until the pork is cooked through.
  • Add all the remaining ingredients to the pan and cook, covered, for 25 mins - continue stirring regularly. Divide between bowls and serve with steamed white rice.
