Ingredients
Method
- 2.5 tbsp olive oil
- 3 red onions, 2 ½ sliced, ½ finely grated
- 400g minced lamb
- 1 tbsp ras el hanout mix
- 80g chopped unsalted pistachios
- ½ pack parsley, chopped
- Flatbreads, relish and salads to serve
- Heat 1.5 tbsp olive oil in a frying pan, and add most of the sliced onions with some salt and pepper, and fry gently for 15 mins until golden and softened.
- Meanwhile, heat the grill to high. Mix the mince, grated onion, most of the nuts and the ras el hanout in a large bowl, stir in the parsley and plenty of seasoning, and shape into patties with damp hands. Place on a baking tray and brush with oil, then grill for 10 mins, turning once, until browned and cooked through. Serve with the sliced onions in flatbreads, with your choice of relish and salad.
