Lamb Kofta with Nuts and Apricot Dressing

Ingredients

Method

  • 2.5 tbsp olive oil
  • 3 red onions, ½ grated, 2 ½ thinly sliced
  • 400g quality lamb mince
  • 1 tbsp ras el hanout spice mix
  • 85g chopped pistachios
  • ½ pack of parsley, chopped
  • 4 tbsp apricot jam
  • 1 lemon, zest and juice
  • 2 carrots, cut into matchsticks
  • 4 wholemeal pittas, split and lightly toasted
  • 3 tbsp Greek yoghurt, to serve
  • Pour 1.5 tbsp of olive oil in a frying pan and add most of the sliced onions and some salt and pepper, and cook for 15 mins until soft and golden. Meanwhile, mix the mince, grated onions, ras el hanout, most of the nuts, half the parsley and some seasoning in a bowl. Form into 8 patties, then place on a baking tray and brush with some oil. Grill for 10 mins, turning once, until browned and cooked through.
  • Add the jam, a pinch of lemon zest and half the lemon juice to the sliced onions, and leave to bubble away until thick and glossy. Set aside. Make the salad by mixing the rest of the sliced onions, the carrots, and the remaining parsley in a bowl. Toss in the rest of the lemon juice and olive oil, and season. Serve with the apricot relish in the pittas, followed by a kofta, some salad, a dollop of yoghurt, and some more nuts. Nice!
