- 4 lamb leg steaks
- 2 tsp chopped shallots
- 30g anchovy fillets plus 1 tbsp of oil from the jar
- 15g chopped parsley
- 1.5 tbsp sherry vinegar
- 3 tbsp olive oil
- ½ tsp runny honey
- Make the marinade by simply mixing all the ingredients – except the lamb steaks – in a large bowl and seasoning well.
- Cut the leg steaks into 2cm chunks and add to the bowl with the marinade. Massage well, then cover and chill for 2 hours or more. When ready, thread the lamb pieces onto 8 skewers and cook over hot coals for 3 mins on each side, or until cooked to your liking.
