Layered Salmon Fillets
- 3 tbsp tartare sauce
- 60g soft cream cheese
- 1 tbsp chopped rosemary
- 35g fresh breadcrumbs
- 1 lemon, zest only
- 1 tbsp olive oil
- 500g salmon fillets
- Preheat the oven to 180C. Mix the tartare sauce, soft cheese and half the rosemary with some seasoning, and set aside. In a separate bowl, mix the breadcrumbs, lemon zest and remaining rosemary.
- Drizzle the oil in a baking tray and lay the salmon fillets on top, then spread with a thick layer of the soft cheese mixture and top with the breadcrumbs. Bake in the oven for 25 mins, then serve with steamed greens or salad.
