  • 300g sliced new potatoes
  • 2 chicken legs
  • 2 tbsp honey
  • 1 lemon, ½ sliced, ½ juiced
  • 1 sliced garlic clove
  • 2 chopped tomatoes
  • 70ml white wine
  • 150g mixed frozen grilled veggies
  • Handful of parsley, chopped
  • Preheat the oven to 200C. Place the potatoes in a bowl and toss with 1 tbsp of oil and some seasoning. Spread over a roasting tray, and top with the seasoned chicken legs, drizzled with honey and lemon juice. Roast for 15 mins.
  • Add the lemon slices, garlic and tomatoes to the tray, flip the chicken legs and pour over the wine. Pop back in the oven for 15 mins more, adding the vegetables and parsley for the last 10 mins. Serve with couscous.
