Lemon Salmon Stir Fry
- 450g salmon fillet, cut into 2.5cm strips
- 2 tsp salt
- 4 tbsp oil
- 1 tbsp chopped ginger
- 1 tsp sugar
- 1 tbsp lemon zest
- 1 lemon, peeled and segmented
- 2 tsp sesame oil
- Basmati rice, cooked, to serve
- Heat up a wok with 3 tbsp oil. Add the salmon strips, and stir fry for 2 mins, or until golden all over. Carefully remove with a slotted spoon, and drain on kitchen paper. Add the remaining oil to the wok, and stir fry the ginger for 20 seconds, then add the lemon zest and segments, sugar, salt and pepper and fry for 2 mins more.
- Return the fish to the wok and mix for 1 minute, then add the sesame oil, stir, and serve with rice. Easy!
