Lime and Ginger Sticky Chicken
- 3 pieces of stem ginger in syrup
- 2 tbsp honey
- 2 tbsp soy sauce
- 2 limes, zest and juice
- 2 crushed garlic cloves
- 6 chicken thighs, skin removed
- Steamed rice, to serve
- Steamed broccoli, to serve
- Preheat the oven to 230C. Dice the ginger pieces and mix with the soy, honey, lime juice and zest and garlic. Add the chicken to the aromatic marinade and mix well, then spread the chicken thighs on a baking dish and bake for 20 mins, turning halfway through. Serve with steamed rice and broccoli, and enjoy.
