Lobster and Melon Cocktail
- 750g cooked lobster, meat chopped into chunks
- 200g ripe green melon, cut into chunks
- 100g cucumber, deseeded and chopped
- 70g quality mayo
- 1 tbsp soured cream
- 2 tbsp ketchup
- 1.5 tsp creamed horseradish
- Splash of Tabasco
- 1 tsp lemon juice
- 1 large little gem lettuce, leaves separated and shredded
- Paprika
- Add the mayo to a bowl and mix with the soured cream, ketchup, horseradish, lemon juice and Tabasco. Divide the lettuce between 4 cocktail dishes. Stir the lobster meat, cucumber and melon in the mixed sauces, then divide between the dishes on top of the lettuce. Sprinkle with paprika, and serve with brown bread and butter.
