Lombardy Pork Burger

  • 500g quality pork mince
  • 1 tsp each fennel seeds and chilli flakes
  • 1 tsp dried oregano
  • Olive oil
  • 2 chopped tomatoes
  • 6 chopped black olives
  • Balsamic vinegar
  • 4 ciabatta rolls
  • 4 tbsp mascarpone
  • Handful of salad leaves
  • Mix the pork, fennel seeds, chilli, oregano and some seasoning until well combined, then shape into 4 patties. Fry in a splash of oil for 7 mins on each side or until cooked through.
  • Meanwhile, make a quick salsa by mixing the olives, tomatoes, a splash of balsamic vinegar and a drizzle of olive oil. Season well, and set aside. When the burgers are ready, spread the mascarpone onto split ciabatta rolls, top with some salad leaves, then stuff with the burgers and a spoonful of the tomato and olive salsa. Perfect!
