Ingredients
Method
- 4 fresh shucked oysters
- 100g coconut cream
- 1 tsp fresh lemon juice
- 2 lychees
- 8 rose petals
- 1g xanthan gum
- Mix the coconut cream, lemon juice and xanthan until smooth. Prepare the lychees by removing the skin and stones, then cutting the flesh into 4 pieces.
- Spoon a little of the coconut mixture onto each oyster, then garnish with a few pieces of lychee and a rose petal to serve. Sheer perfection!
