- 400g tin of three bean salad mix or butter beans, drained
- ¼ red onion, diced
- 90g mange tout, halved
- 1 carrot, peeled into ribbons
- 250 smoked peppered mackerel fillets
- 5g chopped dill
- 1 tbsp vinaigrette
- Add the drained beans to a bowl and stir through the mange tout, onion and ribboned carrot. Toss together and lightly season.
- Remove the skin from the mackerel fillets and flake with a fork or between your fingers. Add to the bowl with the beans and season with black pepper, then mix in the dill and vinaigrette. Stir to combine, then serve immediately with crackers or crusty baguette slices.
