Mackerel and Tahini Soba Noodles
- 100g soba noodles
- 100g sliced runner beans
- 80 smoked mackerel fillet
- 1 tbsp tahini
- Splash of chilli oil
- 1 carrot, cut into fine matchsticks
- 1 sliced spring onion
- ½ tsp sesame seeds
- Boil the noodles in salted water until cooked, stirring frequently to stop them from sticking together. Add the beans for the last 2 mins of the cooking time, then drain everything and refresh under the cold tap.
- Meanwhile, remove the skin of the mackerel fillet and flake the meat into a bowl. Mix in the tahini and chilli oil, then add the noodles, beans, carrot, spring onion and some black pepper. Toss together until everything is coated and combined, adding a splash of water if necessary to loosen. Spoon into a serving bowl and sprinkle with sesame seeds, then sit back and enjoy!
