Ingredients

Method

  • 4 fresh mackerel fillets, skin scored
  • 2 spring onions, sliced into matchsticks
  • 25g ginger sliced into matchsticks
  • 6 tbsp sake
  • 4 tbsp mirin
  • 2 tbsp sugar
  • 1 tbsp dark soy sauce
  • 4 tbsp white miso paste
  • Cooked white rice, to serve
  • Boil 400ml water in a frying pan. Stir in half of the spring onions, the ginger, mirin, sake, sugar and soy sauce, then gently simmer for 2 mins. Add the mackerel, skin-side up, and simmer for 3 mins more. Cover with the lid and cook for an additional 5 mins.
  • Meanwhile, mix the miso in a small bowl with 6 tbsp of water until dissolved. Pour into the pan, shake a little, then cover and simmer for 10 mins more. Transfer to plates and scatter with more spring onions and serve with cooked rice - delicious!
