Mango and Black Bean Salad

Method

  • 1 lime, zest and juice
  • 1 chopped mango
  • 1 chopped avocado
  • 100g halved cherry tomatoes
  • 1 red chilli, deseeded and chopped
  • 1 chopped red onion
  • Small bunch of coriander, chopped
  • 400g tin of black beans, drained
  • Add the chopped mango, avocado, tomatoes, chilli and onion to a bowl, then stir through the lime zest and a good squeeze of lime juice. Leave to sit for 5 mins.
  • When ready, gently fold through the black beans and chopped coriander, and season with salt and pepper or more lime juice if needed. Serve as a side to fish or chicken tacos, or with a bowl of nachos for scooping.
