  • 400g tin of chickpeas, drained
  • 1 tsp oil
  • 1 tsp garam masala
  • 1 red onion, thinly sliced
  • 2.5 tbsp lime and chilli dressing (or similar)
  • 1 sliced mango
  • 120g baby spinach leaves
  • 100g crumbled feta
  • Preheat the oven to 200C. Toss the chickpeas and oil, seasoning and garam masala into a roasting tin and roast for 15 mins. Meanwhile, toss the onions in 1 tbsp of dressing in a bowl, and set aside.
  • Allow the chickpeas to cool slightly, then toss in the mango, spinach leaves, crumbled feta and the dressed onions. Drizzle with the remaining dressing and serve.
