Mango and Strawberry Salad

  • 2 lemongrass stalks
  • 20g root ginger
  • 2 limes
  • 100g sugar
  • 600g chopped strawberries
  • 1 chopped ripe mango
  • Mint sprigs, chopped
  • Add the lemongrass and ginger to a pestle and mortar and bash to slightly crush. Add the combo to a small saucepan, add the grated zest of 1 lime and squeeze in the juice from both limes. Stir in the sugar and 100ml water, and bring to a boil. Simmer until syrupy (about 8 mins), then set aside to cool completely.
  • Add the mango and strawberry pieces to a large bowl. Strain the lemongrass dressing and add a couple of tbsp to the fruit, tossing together to coat each piece. Stir through the mint leaves and serve immediately.
