Ingredients
Method
- 1 bunch of spring onions, chopped
- Thumb-sized piece of ginger, grated
- 1 grated garlic clove
- 1 mango, peeled and chopped
- 450g chicken breast fillet, sliced into strips
- 4 tbsp oil
- 350g mixed oriental stir-fry vegetables
- 3 tbsp soy sauce
- 1 tbsp sweet chilli sauce
- Cooked noodles, to serve
- Fry the chicken in half the oil for 5 mins or until coloured, then remove from the pan and set aside. Add the remaining oil to the pan and fry the spring onions, ginger and garlic for 30 seconds, then stir in the mango and veggies, and stir-fry for a minute more.
- Return the chicken to the pan with the sweet chilli sauce and soy sauce, then stir to mix and cook - covered - for 3 mins or until the chicken is cooked through. Serve with noodles and some more sauces, if you fancy.
