Marinated Feta and Tomato Skewers
- 350g quality feta
- 120ml olive oil
- 1 lemon, zest only
- 2 tsp chopped oregano
- 1 tsp black pepper
- 40 cherry tomatoes
- Large bunch of fresh basil
- 40 skewers
- Cut the feta carefully into 40 squares and place in a bowl. Pour in the olive oil and lemon zest, oregano, and black pepper, and allow to marinate for 2 hours or longer. Assemble by taking a skewer and popping on a cherry tomato, followed by a feta cube and repeating. Finish by skewering a basil leaf - the perfect picnic snack!
