Meatball, Beetroot and Lentil Bake
- 12 pre-made meatballs
- 1 broccoli, cut into florets
- 1.5 red onions, cut into wedges
- 2 x 390g tins of green lentils, drained
- 500g cooked beetroot, cut into wedges
- 120g halved radishes
- 200g yoghurt
- 15g chopped coriander
- 1 crushed garlic clove
- Preheat the oven to 220C. Tip the meatballs, onions and broccoli into a roasting tin and drizzle with oil and seasoning. Toss everything together and roast for 20 mins.
- Stir in the lentils, beetroot and radishes. Roast for another 15 mins until everything is cooked through. Mix the coriander and garlic into the yoghurt, and spoon over the traybake. Swirl into the lentils and serve immediately.
