Mediterranean Chicken and Butter Bean Salad
- 2 roasted garlic cloves
- 1.5 tbsp olive oil
- ½ lemon, zest and juice
- ½ tsp smoked paprika
- 400g tin of butter beans, drained
- 2 roasted red peppers, sliced
- 150g cherry tomatoes, halved
- 100g rocket leaves
- 150g leftover roast chicken, torn
- 25g feta
- Whisk the roast garlic with the oil, lemon juice and zest, paprika, and some seasoning in a bowl. Toss in the beans, rocket, tomatoes, and peppers, and give it all a good mix. Divide between plates, and toss with the chicken and crumbled feta, then drizzle with olive oil. Perfect!
- Top tip - make this a vegetarian treat with some grilled halloumi instead of the chicken!
