What you'll need:
- A dash of olive oil
- ¼ red onion, chopped
- 4 sun-blush tomatoes, chopped
- 100g roasted artichokes from a jar or deli, drained and chopped
- 2 tbsp pitted black olives
- Small handful of sage, chopped
- Salt and pepper
- 125g fresh tagliatelle
- Grated parmesan to serve
Time: 30 mins
Heat up your olive oil in a big pan, and gently fry the red onion for a couple of minutes. Add the olives, tomatoes, and artichokes, and fry for a further 2 minutes. Stir in the sage leaves, and season well.
Cook the pasta according to pack instructions, drain, and save a little cooking water in the pan. Stir in the sauce, and season again to taste. Serve hot with grated parmesan and a dash of chilli oil.
