  • 2 aubergines, cut into bite-sized pieces
  • 3 sliced courgettes
  • 2 sliced red onions
  • 4 tbsp olive oil
  • 500g vine tomatoes, chopped
  • 3 mixed peppers, sliced
  • Crumbled feta, to serve
  • Chopped parsley, to serve
  • Preheat the oven to 200C. Toss the courgettes, aubergine and onion on a large baking tray with the oil and plenty of seasoning, and spread into an even layer.
  • Roast in the oven for 35 mins, then stir through the tomatoes and peppers. Increase the temperature to 220C and roast for another 30 mins or so, stirring occasionally until browned. Remove from the oven, scatter with feta and parsley, and serve with crusty bread.
