Mediterranean Vegetable and Feta Couscous

  • 1 courgette, halved lengthwise and sliced
  • 1 yellow pepper, chopped
  • 1 red onion, cut into wedges
  • 2 tbsp olive oil
  • ½ dried oregano
  • 300g couscous
  • 400ml veg stock
  • 200g crumbled feta
  • Toss the vegetables in a bowl with 1 tbsp of oil, some seasoning and the oregano, then stir fry in a wok for about 7 mins or until tender and charred. Transfer the cooked vegetables back to the bowl.
  • Without wiping the wok, add the couscous and 1 tbsp of oil and fry for 10 seconds before taking off the heat and adding the hot stock. Leave to sit for 5 mins, then fluff with a fork. Mix the vegetables into the couscous and top with the crumbled feta and a pinch more oregano. Drizzle with a little more oil and serve immediately.
