Mediterranean Vegetable and Parma Ham Pasta Salad

  • 400g roast Mediterranean vegetable mix
  • 1 tsp dried oregano
  • 200g farfalle pasta
  • 4 tbsp garlic and herb cream cheese
  • 100g parma ham, cut into strips
  • 100g baby spinach leaves
  • Preheat the oven to 180C. Toss the vegetables in a splash of olive oil and the oregano, season well and roast for 20 mins or until starting to caramelise. Meanwhile, cook the pasta in boiling salted water until al dente, then drain and leave to cool.
  • Add the cooked vegetables to the cooled pasta, then stir through the ham slices and soft cheese to combine. Mix in the spinach leaves, season to taste, then serve.
