Mega Green Curry with Fried Tofu

  • 300g firm tofu, cut into triangles and patted dry
  • 2 tbsp oil
  • 2 tsp each coriander seeds and cumin seeds
  • 2 cardamoms, seeds removed and bashed
  • 10g chopped ginger
  • 1 chopped onion
  • 2 chopped garlic cloves
  • 400g spinach leaves
  • 10g chopped coriander
  • Fry the tofu in 1 tbsp of oil for 3-4 mins or until golden all over. Remove and set aside to drain on kitchen paper. Pour the rest of the oil into the pan, then fry the spices for 3 mins until popping.
  • Add the onion, ginger and garlic and cook for 10 mins or until golden. Reduce the heat, add the spinach and leave to wilt. Remove from the heat and add everything to a blender with 300ml water, then blitz until very smooth. Pour everything back into the pan and season well, then stir in the fried tofu and simmer for 5 mins. Season again to taste, then serve with chopped coriander and cooked brown rice.
